Distilled in Sebastopol, CA from organic grains. Truly a hand crafted product. The attention to the distillation process produces layers of flavor that are only enhanced by it's 4+ years in barrel.
Our store pick was a 'rainbow barrel'. Each run of the still produces 2 barrels of whiskey plus some extra. This overflow was gradually added to the barrel over the course of a year. At cask strength, this rye whiskey thrives in cocktails. On it's own I serve myself with one ice cube to unravel all the flavors.
