This is a stellar, dry brew with an SMV of +18 and a singing acidity of 2.2. In the glass the sake is light straw in color with a nose of targeted savory umami, almond skins, brie rind, and marzipan. While it's incredibly easy to be captivated by the nose, the palate is also so saline and targeted. I'm a huge fan of this - buy as much as you can.
